I love spreadsheets, and I especially love color-coded spreadsheets. I made this submission tracker spreadsheet to keep track of stories and poems as I send them into the world. Features include:

-Color-coding cells based on submission status;

-Counting total submissions and acceptances, rejections, and pending subs (and a corresponding pie chart!);

-Counts days between dates submitted and resolved for resolved submissions, and counts dates between submission and current date for pending submissions.

Feel free to adjust it to fit your needs. There are comments on some cells with explanations for the formulae.
